From the texture to the flavor, it is everything you want in a chocolate chip muffin! An extra bonus it that this recipe is incredibly easy-to-make and have prepared for the week ahead.

  • Kodiak Cake Pancake/Waffle Mix – However, you can use any pancake mix!
  • Baking Powder and Baking Soda – Both are used in this muffin recipe to provide extra lifting power to the height of the muffins while also balancing the recipe’s acidity.
  • Salted Butter – Unsalted butter will work as well and then add in a pinch of salt to the batter
  • Egg – Large egg left at room temperature before adding to the batter
  • Milk – Any type of milk will work in this recipe. However, I use almond milk majority of the time.

I know what you’re thinking. Why would I use pancake mix to make the muffins when I can just use regular flour? I used to wonder the same thing, until I made this recipe.

  • First of all, pancake mix makes the process a bit easier since it already includes most of the dry ingredients.
  • Also, for this recipe, I added additional baking powder and baking soda so that the muffins don’t come out flat like a pancake.
  • By resting the batter, it helps create that rise like there would be in your typical bakery-style muffin.
  • The pancake mix creates a lighter and fluffier muffin compared to using a regular flour.

Tips, Tricks and Storage Instructions

  • Do not over-mix the batter. This will create a tough and unpleasant muffin texture.
  • Make sure to spray the muffin molds with nonstick spray or use a muffin liner to prevent sticking.
  • Space the muffins in every other muffin mold when baking to give the muffins more air and room to rise.
  • If you use a mini muffin pan, start checking them much earlier because they bake faster.

Ingredients
 

  • 1/2 cup Salted Butter, melted
  • 1/4 cup Granulated Sugar
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 1 cup Milk
  • 2 cups Kodiak Cake Pancake Mix
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 cup Semi-sweet Chocolate Chips

Instructions
 

  • In a large mixing bowl, add the butter, sugar, egg and vanilla extract
  • Mix until fully combined
  • Add the Kodiak Cake Mix, baking powder and baking soda
  • Pour in the milk
  • Mix until just combined
  • Fold in the chocolate chips
  • Let the batter rest for 30 minutes while the oven preheats to 425 degrees F
  • (Optional Tip: Line a muffin tray with liners in every other mold. I use two tins to bake them side-by-side at the same time. This allows the muffins to have more room to rise)
  • Fill each liner a little over halfway full
  • Bake for 7 minutes at 425 degrees F, then reduce the oven to 350 degrees F and bake for 8 to 10 minutes more, until a toothpick comes out clean.
  • Let cool for 5-10 minutes in the muffin tin then transfer to a cooling rack
