This recipe is extremely healthy! Besides the nutritional benefits of sweet potato (see section above), there are only a few ingredients used to make this recipe.

By baking instead of frying the potatoes, it is also a much healthier option!

What holds the sweet potato together?

The egg is the binder in this recipe bringing it all together.

Not necessary for the recipe but you can if you prefer. I tend to leave it on and just grate the potato with it.

There are a lot of healthy nutrients in the skin of a sweet potato so I prefer to keep it in the recipe but that is personal preference.

Can I store this for later?

Yes! Store in an airtight container for 3-5 days or up to 1 month in the freezer.

How do I reheat these hash browns?

You can reheat them in the microwave for 45-60 seconds. However, I recommend reheating them in the oven so that they still come out nice and crispy!

Heat in the oven for about 10 minutes at 400 degrees F. You can also flip after 7 minutes, baking the hash brown patties for an additional 5-8 minutes on the other side.
