    sometimes all i want for lunch or dinner is a salad bigger than my face. can you relate? if so, you'll want to make this delicious kale salad.

    this salad is inspired by one of my favorite tampa restaurants. i am not exagerating when i say that i dream about this salad. with that being said, i had to take matters into my own hand so that i could make this salad whenever the craving hits.

    whether you're a salad lover like myself or just trying to add some extra greens to your diet...

    • kale
    • dried cherries
    • marcona almonds
    • olive oil
    • lemon juice
    • basil

    you don't have to! however,i find that when you massage the kale with olive oil, it softens the kale and adds a delicious flavor.

    can i use another cheese for this recipe?

    you can use any cheese that you'd like! if you want to make this chopped kale salad vegan-friendly than you would substitute the shaved parmesan with a vegan cheese.

    what are other toppings i can add to this salad?

    grilled or pulled chicken will pair nicely with these flavors and add extra protein to the dish. in addition, you can add diced apples, other nuts, seeds and vegetables to make the salad more unique to you!

    can i make this salad more than two serving?

    yes! just multiply the amount of ingredients by the amount of servings you would like to make. this recipe is perfect if you want to make enough for the week ahead or a big group.

    how do i store this salad if there are leftovers?

    store in an airtight container for 3-5 days

    Ingredients
      

    chopped kale salad

    • 1 bag kale chopped
    • 1 bag romaine lettuce
    • ½ cup dried cherries
    • ½ cup marcona almonds
    • ½ cup parmesan shaved

    olive oil dressing

    • ¼ cup olive oil
    • 1 lemon juice only
    • 1 tbsp basil
    • 1 tbsp oregano
    • sea salt to taste
    • pepper to taste

    Instructions
     

    • prepare the kale by chopping and add it into a large mixing bowl
    • mix the olive oil, lemon juice and seasoning in a small bowl until fully combined
    • drizzle the olive oil dressing on top and massage the kale with your hands
    • once the kale is fully covered and softened, you have massaged the kale enough
    • add in the romaine, dried cherries, marcona almonds and shaved parmesan
    • mix until fully combined
    • grab a fork and enjoy!

when the milkshake craving hits…this is what I make and it does not disappoint!!! the key to making this taste like a vanilla milkshake is safeandfair vanilla ice cream protein powder. it’s delicious AND kid friendly too 🥳

RECIPE
- 2 small bananas, frozen
- 1 tbsp chia seeds
- 1 tbsp hemp seeds
- 1 tbsp ground flax seeds
- 1 serving safeandfair vanilla ice cream protein powder 
- 1 cup almond milk (or milk of choice)
- 1 tsp vanilla extract 

Blend all of the ingredients together until creamy, top with sprinkles for some extra fun and enjoy!

    MATCHA OVERNIGHT OATS 💚 - 1/2 cup rolled oats MATCHA OVERNIGHT OATS 💚

- 1/2 cup rolled oats
- 1/2 tbsp chia seeds
- 1/2 tbs hemp seeds
- 1/2 tbsp honey/maple syrup
- 1 tsp matcha powder 
- 1 serving vanilla protein powder (optional)
- 1 cup almond milk (or milk of choice)
- toppings : coconut and fresh blueberries 

Mix all the ingredients together, except for the toppings and let sit in the fridge overnight. Take out when ready to eat and add any toppings your heart desires 🫐🥥

as the weather gets warmer, i’m starting to craveeee s’mores! to make these s’mores brownies i used pamelasproducts brownie mix and honey grahams…LIFE CHANGING if you ask me! # ad 

How to Make S’mores Brownies - 

1. Make the brownie batter according to the package instructions (the batter will be thick)
2. Crush the graham crackers and add to the batter with mini marshmallows (or big marshmallows cut into fourths)
3. Mix and spread into an 8x8 baking pan lined with parchment paper.
4. Add extra graham cracker and marshmallow on top
5. Bake according to the package instructions
6. Let cool, cut the brownies and enjoy!

The brownies come out insanely fudgy and delicious. The pockets of marshmallow and crunch from the graham cracker are absolute perfection👌🏼 #pamelascreator

- 1/2 cup rolled oats
- 1/2 tbsp chia seeds

- 3/4 to 1 cup of almond milk

toppings : vanilla greek yogurt and cocoa powder dusting

- 1 cup frozen pineapple

    i have never met anyone who didn’t like pop tart i have never met anyone who didn’t like pop tarts growing up, have you?

let me introduce you to my adult version of this childhood favorite. i use lantanafoods Dark Chocolate Hummus as the filling and it was a dream come true 🍫 it adds just the right amount of sweetness, taking me right back to my childhood but without the sugar hangover 🤪

HOW TO MAKE ⬇️ 
1. cut two rectangles out of pre-made pie dough
2. add about 2 tbsp of hummus in the center and spread it out a little without going to the edges
3. press along the four sides with a fork
4. bake in the oven at 425 degrees F for 10-12 minutes or until the dough is golden and fully baked through
5. cool slightly and enjoy!
