Small Batch Rice Krispie Treats Recipe
If you don’t want to have the temptation of a big batch lying around the house, make this Small Batch Rice Krispie Treats recipe. The crispy rice cereal is generously coated in melted marshmallows with the perfect amount of vanilla flavor in each bite.

This ooey-gooey dream of dessert is incredibly easy to make and only requires four simple ingredients.
Also, you can whip up a batch of these treats in less than 10 minutes. However, waiting for them to set is the hardest part!

- Gather and measure out all ingredients before doing anything else. This recipe goes quickly, so you want to have everything ready to go when it’s needed.
- Don’t rush the process. It may be tempting to turn up the heat a little to melt either the butter or marshmallows more quickly, but it usually doesn’t end well. Be patient and let the ingredients melt without the risk of burning.
- Let the Rice Krispie Treats set completely before slicing. If you slice while they are still warm, they will just fall apart in your hand. Once they have set to room temperature, they can be sliced. I usually wait about 1-2 hours before removing them from the pan.

This recipe can be made gluten-free by using gluten-free rice cereal and ensuring that the marshmallows you use are gluten-free as well (they usually are but double check).
Yes, however, don’t add the last 1 oz of marshmallows to the mix unless you cut them in to smaller pieces. Otherwise, add all the marshmallows in at the same time after the butter is melted.
No, you should never refrigerate any Rice Krispie Treat. This will cause them to get hard/dry, losing their soft and chewy texture.
They should cool for at least 30 minutes at room temperature before cutting. For best results, allow them to cool for 1-2 hours, or until they are firm enough to hold their shape when cut.
Store in an airtight container at room temperature for 3-5 days.


Small Batch Rice Krispie Treats Recipe
Ingredients
- 6 tbsp Salted Butter
- 6 oz Mini Marshmallows, separated
- 1 tsp Vanilla Extract, or 2 tsp Vanilla Paste
- 2 cups Crispy Rice Cereal
Equipment
- 8½" x 4½" Loaf Pan
- parchment paper
- Nonstick Spray
Instructions
- Prepare the loaf pan by lining with parchment paper and spraying non-covered areas with nonstick spray
- To a large saucepan over medium heat, add the salted butter
- Once melted, turn the heat to low and add in 5 oz of the marshmallows
- Stir until melted then add in the vanilla
- Mix and remove from heat
- Add in the crispy rice cereal and remaining amount of the mini marshmallows
- Mix until just combined
- Transfer to the prepared loaf pan
- Spray a spatula with nonstick spray then gently press it down into an even layer (the nonstick spray prevents it from sticking to the cereal treats)
- Let rest at room temperature for about 1 hour
- Remove from the pan
- Slice and enjoy!
