The Best Chocolate for Melting

My favorite brand to use for melting chocolate chips is Ghirardelli. However, Nestle brand is also a great option that is accessible.

However, you don’t have to use white chocolate chips, you can also chop up a white chocolate bar and use that.

When melting chocolate, start with 30 second increments stirring in between each. However, it shouldn’t take too long and you don’t want overheat the chocolate, causing it to seize.

This White Chocolate Rocky Road is the perfect combination of salty and sweet. The white chocolate chunks contain pieces of pretzel, shortbread cookies, marshmallows and swirls of caramel on top. It's the perfect no-bake treat to satisfy your sweet tooth.

Ingredients
 

  • 15 oz White Chocolate Chips, melted
  • 3/4 cup Mini Marshmallows
  • 120 grams Shortbread Cookies, chopped in pieces
  • 3/4 cup Pretzels, crushed
  • 2 tbsp Caramel Sauce, drizzled on top

Instructions
 

  • Line a loaf pan with parchment paper and spray any uncovered areas with nonstick spray
  • Prep all the mix-in ingredients by chopping the pretzels and shortbread cookies
  • Melt the white chocolate in a microwave-safe bowl
  • Add all of the mix-ins (except the caramel) to a large mixing bowl
  • Pour the melted white chocolate on top
  • Mix until all pieces are coated in chocolate
  • Transfer to a prepared loaf pan
  • Spread in an ever layer
  • Drizzle the top with caramel
  • Put in the fridge for at least 2 hours to set (You can also put it in the freezer to set more quickly)
  • Remove from the fridge once set
  • Cut into chunks
  • Enjoy!
