    from the texture to the flavors in this loaf, it is absolute apple cinnamon perfection. the small diced apples are cooked perfectly by the time the rest of the loaf is done baking. and the flavor? the cinnamon and nutmeg are strong but not too overpowering. it pairs perfectly with the apple to make the perfect bite every time.

    main ingredients

    • coconut oil
    • eggs
    • vanilla extract
    • honey
    • apple cider
    • apple sauce
    • gluten free flour
    • baking powder
    • ground cinnamon
    • ground nutmeg
    • granulated sugar (for topping)
    • ground cinnamon (for topping)

    what are the best apples to use for this recipe?

    my favorite apples to use for this recipe are macintosh apples. we get them fresh from the farm every year and i bake until there are none left!

    however, you can use other apples as well that are perfect for baking. these are : cortland, macoun, fuji and gala.

    any apple will work for this recipe but these are my recommendations!

    how to make the batter

    1. preheat the oven to 350 degrees F
    2. line a loaf pan with parchment paper or spray with nonstick
    3. melt the coconut oil and let it cool
    4. while the coconut oil is cooling, dice the apples into small chunks
    5. whisk the eggs with the coconut oil, vanilla extract, honey, apple cider and apple sauce
    6. once fully combined, fold the dry ingredients into the wet ingredients
    7. mix until just combined and then fold in the apples
    8. pour the batter into the loaf pan and spread it into an even layer
    9. add about ¼-1/3 cup of diced apples on top of the batter (should be sporadically spread out)
    10. sprinkle the cinnamon sugar mixture on top
    11. put in the oven to bake for ~60 minutes
    12. let cool completely (1-2 hours) before slicing
    13. enjoy!

    do i have to use gluten free flour?

    nope! you can also use regular all purpose flour (the same amount)

    how big should the apple chunks be?

    they should be diced quite small so that they can cook fully in the oven with the batter. you don't want to be biting into raw apple chunks!

    how many apples do i need?

    you need 1 ¼ cups of apples which for me is about 4-5 small apples.

    ways to know the loaf is done baking?

    you know the apple cider donut bread is done baking when the outer edges are crisp. you should also be able to stick a toothpick in the center and it will come out clean when it's done baking.

    how to store leftovers?

    store any leftovers in an airtight container at room temperature for up to 5 days.

    Ingredients
      

    • 1 ¼ cup apples diced
    • 2 cups gluten free flour
    • 2 tsp baking powder
    • 2 tsp ground cinnamon
    • ½ tsp ground nutmeg
    • ¼ cup coconut oil melted
    • 2 eggs
    • 1 tsp vanilla extract
    • ⅓ cup honey
    • ¾ cup applesauce
    • ¾ cup apple cider
    • ¼ cup granulated sugar for topping
    • ½ tbsp ground cinnamon for topping

    Instructions
     

    • preheat the oven to 350 degrees F
    • line a loaf pan with parchment paper or spray with nonstick
    • melt the coconut oil and set it aside to cool
    • dice the apples into small chunks, reserve ¼ of the diced apples for the topping
    • whisk the eggs with the coconut oil, vanilla extract, honey, apple cider and apple sauce
    • once fully combined, add the dry ingredients into the wet ingredients
    • mix until combined and fold in the diced apples
    • pour in the batter into the loaf pan and spread it into an even layer
    • sprinkle the cinnamon sugar mixture on top of the batter
    • add about ¼ cup of diced apples on top of the batter (should be sporadically spread out)
    • put in the oven to bake for about 60 minutes
    • let it cool completely (1-2 hour) before removing from the pan and slicing
    • enjoy!

      I haven't made this yest, however it appears there to be at least one typo in this recipe?!? Is it apple cider vinegar or apple cider? Also, is there 2 x 2tsp of cinnamon?

as the weather gets warmer, i’m starting to craveeee s’mores! to make these s’mores brownies i used pamelasproducts brownie mix and honey grahams…LIFE CHANGING if you ask me! # ad 

How to Make S’mores Brownies - 

1. Make the brownie batter according to the package instructions (the batter will be thick)
2. Crush the graham crackers and add to the batter with mini marshmallows (or big marshmallows cut into fourths)
3. Mix and spread into an 8x8 baking pan lined with parchment paper.
4. Add extra graham cracker and marshmallow on top
5. Bake according to the package instructions
6. Let cool, cut the brownies and enjoy!

The brownies come out insanely fudgy and delicious. The pockets of marshmallow and crunch from the graham cracker are absolute perfection👌🏼 #pamelascreator

- 1/2 cup rolled oats
- 1/2 tbsp chia seeds
- 1/2 tbsp hemp seeds 
- 1/4 cup coffee
- 1/2 tbsp maple syrup 
- 3/4 to 1 cup of almond milk

toppings : vanilla greek yogurt and cocoa powder dusting

let the oats sit overnight and then top with the yogurt and cocoa powder before eating - enjoy!

this matcha avocado smoothie with pineapple and mango is the perfect way to get in the mood for warmer weather !! 

ingredients
- 1 cup frozen pineapple
- 1 cup frozen mango
- 1/4 avocado, frozen 
- 1 serving protein powder 
- 1 tbsp honey
- 1 tsp matcha powder 
- 1 to 1.5 cups coconut water (depends on your smoothie thickness preference)

    i have never met anyone who didn’t like pop tart i have never met anyone who didn’t like pop tarts growing up, have you?

let me introduce you to my adult version of this childhood favorite. i use lantanafoods Dark Chocolate Hummus as the filling and it was a dream come true 🍫 it adds just the right amount of sweetness, taking me right back to my childhood but without the sugar hangover 🤪

HOW TO MAKE ⬇️ 
1. cut two rectangles out of pre-made pie dough
2. add about 2 tbsp of hummus in the center and spread it out a little without going to the edges
3. press along the four sides with a fork
4. bake in the oven at 425 degrees F for 10-12 minutes or until the dough is golden and fully baked through
5. cool slightly and enjoy!

thursday’s we’re always pasta night growing up and i looked forward to it EVERY WEEK. if i could go back, I would add this pesto pasta recipe to that rotation 🤤

ingredients 
- your favorite pasta (i typically use a chickpea pasta)
- traderjoes pesto
- 1 cup cooked peas
- 1/2 cup diced sun dried tomatoes

this is my go-to single serving cookie recipe and i think we can see why… it’s crispy on the edges but soft and chewy in the middle 🤤

i load it up with tons of chocolate chips AND chocolate chunks because chocolate = happiness in my world. top it off with some flaky sea salt and you’ve got perfection!

ingredients 
- 1 egg yolk
- 1 tbsp butter, melted 
- 1 tbsp tahini
- 2 tsp vanilla extract 
-1/4 cup gluten free flour 
- 1/8 tsp baking soda 
- chocolate chunks or chocolate chips (or both)
- flaky sea salt for topping (optional)

bake the cookie at 350 degrees F for 18-20 minute. top with the flaky sea salt immediately after remixing from the oven if desired 🍪

not only because its delicious but this protein chocolate cake is good for me too! there is no added flour, just protein powder combined with egg and banana to make the base. 

i used safeandfair chocolate protein powder (that’s also kid friendly) because it adds such a delicious flavor while also sneaking in some veggies! the protein powder has a nice texture, giving you a cake that’s moist and fluffy.
