What are the best apples to use for this recipe?
My favorite apples to use for this recipe are Macintosh apples. We get them fresh from the farm every year and I bake until there are none left!
However, you can use other apples as well that are perfect for baking. These are : Cortland, Macoun, Fuji and Gala apples.
How to Make Gluten Free Apple Bread
- Preheat the oven to 350 degrees F
- Line a loaf pan with parchment paper or spray with nonstick
- Melt the coconut oil and let it cool
- While the coconut oil is cooling, dice the apples into small chunks
- Whisk the eggs with the coconut oil, vanilla extract, honey, apple cider and apple sauce
- Once fully combined, fold the dry ingredients into the wet ingredients
- Mix until just combined and then fold in the apples
- Pour the batter into the loaf pan and spread it into an even layer
- Add about ΒΌ-1/3 cup of diced apples on top of the batter (should be sporadically spread out)
- Sprinkle the cinnamon sugar mixture on top
- Put in the oven to bake for ~60 minutes
- Let cool completely (1-2 hours) before slicing

- Mix until combined and fold in the diced apples
- Pour in the batter into the loaf pan and spread it into an even layer

I haven't made this yest, however it appears there to be at least one typo in this recipe?!? Is it apple cider vinegar or apple cider? Also, is there 2 x 2tsp of cinnamon?
