I have always been a pancake person but making these Sourdough French Toast Bites have given french toast a place in my breakfast routine.
They are so incredibly delicious and the sourdough bread adds a nice flavor.
I used to think that French Toast wasn’t filling or a good breakfast. However, I love to pair this recipe with some greek yogurt to add some extra protein.

The Best Breads for Making French Toast
While French Toast can be made with truly any bread. There are some that work better than others!
In this recipe, I use sourdough bread. I like to get it fresh from the bakery, however, there are great options at your local grocery store that will work just as well.
Some other breads that are perfect for making French Toast are Brioche, Challah and your classic sliced white bread.
How to Make Sourdough French Toast Bites
- Add the almond milk to a shallow dish
- Crack the eggs into the dish
- Add the maple syrup, vanilla extract and ground cinnamon
- Whisk until fully combined
- Slice the sourdough bread into bite-sized pieces
- Add about 10 pieces to the mixture, soaking and flipping them to coat the other side
- Transfer to a heated sauté pan (over medium heat) that has been greased with butter or coated with non-stick spray
- Flip each French Toast Bite after about 2 minutes and it has a nice golden brown color
- Cook another 2 minutes or until golden and remove from the pan
- Repeat this process until all the bites are used up
- Top the French Toast Bites with some fresh berries and a maple syrup drizzle
- Enjoy!

Nope! You can really use any sliced bread that you have on hand. However, sourdough soaks up the french toast mixture very well and is delicious of course.
Substitute the eggs with 2 flax eggs. To make, add 2 tbsp of ground flax seed to 4 tbsp of water. Mix and let sit for 10 minutes prior to using in the recipe.
I like to get a nice caramelization on the bread and I lift it up slightly after about 2 minutes to check. Once ready, I flip and crisp up the other side before removing from the pan.
Yes! You can make up to two days ahead for ultimate freshness. Just keep in the fridge and reheat in the microwave until warm when ready to eat.
