    one of my favorite parts and the best parts of fall is apple cider donuts. they are the perfect fall treat...especially if you buy them hot and fresh at the farm!

    my family goes apple picking ever year and i always look forward to getting that warm apple cider donut. the worst part? waiting in the line to get it.

    this gluten free apple cider donut recipe was inspired by that long wait in line. with this recipe, i can make these donuts any time i want right at home.

    it seems to be the most talked about fall treat every time the leaves start to change color. but what makes them so special?

    whether you fry or bake these donuts, what makes them special are the apple chunks and delicious cinnamon sugar crispness in every bite.

    how to make apple cider donuts

    1. the first thing you want to do is preheat the oven so that it is ready when you're done making the batter.
    2. now let's start by prepping the ingredients! you will want to start by dicing the apples.
    3. get the rest of the ingredients together, measuring them out and combining them all together to make the batter.
    4. using a piping bag or spoon, fill the donut pan until the batter just goes to the top.
    5. bake the donuts
    6. once done baking, let the donuts cool for 10 minutes.
    7. coat with cinnamon and sugar and transfer the donuts to a cooling rack
    8. last, but definitely not least... eat, share and enjoy these tasty donuts!

    you can swap gluten free flour for regular all purpose

    can i use vegan butter?

    i would suggest swapping the butter for coconut oil or a similar vegan butter such as earth balance or miyoko's. however, keep in mind that i have not tested the recipe with these products and it may affect the final result.

    do i have to use apple cider?

    yes, the apple cider is necessary in this recipe and adds more delicious flavor!

    can i double the recipe?

    yes! just double the amount of each ingredients.

    how should these donuts be stored?

    store in an airtight container at room temperature for up to 3 days or in the refridgerator for up to 5 days.

    Ingredients
      

    donuts

    • 1 cup gluten free flour
    • ½ tsp baking powder
    • ½ tsp baking soda
    • ½ tsp ground cinnamon
    • ¼ tsp ground nutmeg
    • 2 tbsp butter or coconut oil melted
    • ¼ cup brown sugar packed
    • ¼ cup granulated sugar
    • ¼ cup almond milk
    • ¼ cup apple cider
    • 1 tsp vanilla extract
    • 1-2 small apples diced in small chunks

    cinnamon sugar coating

    • ¼ cup butter melted
    • ½ cup granulated sugar
    • 1 tsp ground cinnamon

    Instructions
     

    • preheat the oven to 350 degrees F and spray the donut pan with nonstick spray
    • in a large mixing bowl combine the sugars with the butter, almond milk, apple cider, vanilla extract
    • mix until fully combined
    • fold in the flour, baking powder, baking soda, cinnamon and nutmeg until fully combined
    • add the small chunks of apples and fold into the batter
    • using a piping bag or spoon, add the batter into the donut pan
    • bake for 10-12 minutes or until donuts are fluffy with the edges lightly browned
    • transfer the donuts to a wired rack that is topped with parchment paper to cool
    • let cool for about 10 minutes before coating
    • combine the cinnamon and sugar together in a wide, shallow dish
    • melt the butter in a wide and shallow dish
    • dip the donuts into the butter then roll in the cinnamon sugar mixture covering all sides
    • these donuts are best enjoyed fresh!

as the weather gets warmer, i’m starting to craveeee s’mores! to make these s’mores brownies i used pamelasproducts brownie mix and honey grahams…LIFE CHANGING if you ask me! # ad 

How to Make S’mores Brownies - 

1. Make the brownie batter according to the package instructions (the batter will be thick)
2. Crush the graham crackers and add to the batter with mini marshmallows (or big marshmallows cut into fourths)
3. Mix and spread into an 8x8 baking pan lined with parchment paper.
4. Add extra graham cracker and marshmallow on top
5. Bake according to the package instructions
6. Let cool, cut the brownies and enjoy!

The brownies come out insanely fudgy and delicious. The pockets of marshmallow and crunch from the graham cracker are absolute perfection👌🏼 #pamelascreator

    TIRAMISU OVERNIGHT OATS ☕️ - 1/2 cup rolled o TIRAMISU OVERNIGHT OATS ☕️

- 1/2 cup rolled oats
- 1/2 tbsp chia seeds
- 1/2 tbsp hemp seeds 
- 1/4 cup coffee
- 1/2 tbsp maple syrup 
- 3/4 to 1 cup of almond milk

toppings : vanilla greek yogurt and cocoa powder dusting

let the oats sit overnight and then top with the yogurt and cocoa powder before eating - enjoy!

this matcha avocado smoothie with pineapple and mango is the perfect way to get in the mood for warmer weather !! 

ingredients
- 1 cup frozen pineapple
- 1 cup frozen mango
- 1/4 avocado, frozen 
- 1 serving protein powder 
- 1 tbsp honey
- 1 tsp matcha powder 
- 1 to 1.5 cups coconut water (depends on your smoothie thickness preference)

    i have never met anyone who didn’t like pop tart i have never met anyone who didn’t like pop tarts growing up, have you?

let me introduce you to my adult version of this childhood favorite. i use lantanafoods Dark Chocolate Hummus as the filling and it was a dream come true 🍫 it adds just the right amount of sweetness, taking me right back to my childhood but without the sugar hangover 🤪

HOW TO MAKE ⬇️ 
1. cut two rectangles out of pre-made pie dough
2. add about 2 tbsp of hummus in the center and spread it out a little without going to the edges
3. press along the four sides with a fork
4. bake in the oven at 425 degrees F for 10-12 minutes or until the dough is golden and fully baked through
5. cool slightly and enjoy!

thursday’s we’re always pasta night growing up and i looked forward to it EVERY WEEK. if i could go back, I would add this pesto pasta recipe to that rotation 🤤

ingredients 
- your favorite pasta (i typically use a chickpea pasta)
- traderjoes pesto
- 1 cup cooked peas
- 1/2 cup diced sun dried tomatoes

this is my go-to single serving cookie recipe and i think we can see why… it’s crispy on the edges but soft and chewy in the middle 🤤

i load it up with tons of chocolate chips AND chocolate chunks because chocolate = happiness in my world. top it off with some flaky sea salt and you’ve got perfection!

ingredients 
- 1 egg yolk
- 1 tbsp butter, melted 
- 1 tbsp tahini
- 2 tsp vanilla extract 
-1/4 cup gluten free flour 
- 1/8 tsp baking soda 
- chocolate chunks or chocolate chips (or both)
- flaky sea salt for topping (optional)

bake the cookie at 350 degrees F for 18-20 minute. top with the flaky sea salt immediately after remixing from the oven if desired 🍪

not only because its delicious but this protein chocolate cake is good for me too! there is no added flour, just protein powder combined with egg and banana to make the base. 

i used safeandfair chocolate protein powder (that’s also kid friendly) because it adds such a delicious flavor while also sneaking in some veggies! the protein powder has a nice texture, giving you a cake that’s moist and fluffy.
